After beginning with Mr. Petraske's seminal outfit as barback and porter, Mr. Schwartz was rigorously trained by Mr. Petraske in all elements of his visionary project before going on to  head bartender and  manager. Mr Schwartz developed, expanded and implemented many of the world famous ingredients, recipes and service protocols including the iconic ice program.
