With Mr. Petraske, Little Branch was opened expanding the M&H concept to a larger format with an open door policy and a live jazz element.  Mr Schwartz was involved in licensing and permitting, design and construction of the bar, created the menu, service plan and trained the staff, working as a constant presence while managing throughout its first 6 years.  The cocktail list he created at Milk & Honey was expanded and the ice program was further innovated to accommodate a larger volume format.  Mr. Schwartz continues to oversee operations at Little Branch.  It is a point of pride for Mr. Schwartz to have partnered with several employees in new ventures continuing Mr. Petraske's generous (and unique to the industry) tradition of growth through advancement.  Staff personally hired and/or trained by Mr. Schwartz have gone on to open The Varnish, Cuffs & Buttons, Dutch Kills, The Everleigh, Attaboy, Silver Lining, Middle Branch and The Ship. Others have lent their talents to Midnight Rambler, the Grand Banks, The Django, and countless others.
